Hello, everyone! Today we will discuss the traditional and authentic Brazilian Corn Cake (or Fubá cake, as we like to call it). Have you ever tasted it? Well, we won’t just learn what this cake is made of (what, after all, is fubá?), but also watch a recipe so you can bake it at your own home! Let’s check out our explanation and our bolo de fubá recipe!
What is Fubá?
First, let’s learn why this cake is so unique in our culture. Fubá, to begin with, is a word inherited from the Africans to designate flour. But fubá is nothing more than a powder obtained by finely grinding corn. Those responsible for bringing corn to Brazil were the Portuguese, who already widely used this flour for their typical foods.
But it was from the 18th century onwards that corn became central to Brazilian food in the form of fubá. It was the food of travelers and vendors, who brought cornmeal and its culinary practicality to each new city. Soon, fubá (and also corn) took over the country.
The corn harvest season is intensely celebrated through Festas Juninas. It is during the Festas Juninas that people eat foods derived from corn and fubá, such as popcorn, puddings, pamonhas, broas, hominy and so on. If you ever want to check out a typical June Festival, come study with us in Brazil and enjoy our RioLIVE! activities in June!
